Chunky Monkey Banana Muffins

I'm super excited about this recipe!! I would dare to say it's one of the best things I've ever created! I was really craving a good snack type muffin the other week, so I headed to the kitchen and came out hot, sweaty, and deliciously satisfied! However, when the week finished and my muffins were all gone, I realized I had either lost the recipe or had forgotten to write it down. I was so made at myself!! Luckily I tried making them again today, and I think they turned out pretty much the same. Thank goodness, or I never would have forgiven myself! These muffins are incredibly simple, yet they taste like a mini loaf of banana bread. The best banana bread in the world that is!! And to top it off, they are gluten (watch the oats), dairy, and completely sugar free! Not bad, right?! Just slice one in half, spread peanut butter on it, put it back together, and you've got an amazing snack, or dessert. These seriously tasted like cookies! Mmm...mm...good. CHU...

Crepillas

I don't know why, but lately I've been dying for a soft, gluten free tortilla that I can make wraps with and it won't break.  Experiment time! I headed to the kitchen and was just throwing things together. I kind of based it off of mom's crepe recipe in her jumbo recipe book.  Walaah! Magic! I cooked them like a crepe and just about wanted to shout for joy when they came out so beautifully! Mom and dad were gone, so I couldn't share my joy (which in this situation was very difficult).  Now, I call these crepillas because they're a mix between a crepe and a tortilla. I made sandwich wraps with these as well as sweet crepes in the morning. They are wonderfully diverse! Oh, and the good news... they probably take 10 min. max to make. Can't complain about that! Creamy Shrimp  &  Veggie Couscous "Restaurant worthy!" Serves: ~6 Avocado Lemon Cilantro Dressing :             2 ripe avocados             not quite all the juice from ½ lemon             Leafs from a small bunch of cilantro             1 garlic clove, minced             1 Tbsp. olive oil             dash sea salt             water Blend all of the ingredients together in a blender. Simple Roasted Veggie Soup

I am really excited to share this recipe! It's not very often that I share a savory recipe of my very own! Because of my IBS, vegetables don't digest very well, especially when raw, so I made this simple soup in hopes that I could still get some of the nutrition from veggies without having too much pain in my stomach since they are already cooked and blended. I wasn't 100% sure this would work out, but it actually turned out to be super yummy! There's a nice creamy texture from the pumpkin and complimentary flavors of the other veggies. I was surprised at how perfectly they went together! Mom and dad even said they loved it! Vegetables ready for roasting! And...to make matters even better...it's SUPER healthy! Fresh Spring Rolls with Peanut Sauce

 I love fresh spring rolls! There's just something about them that I love. I think it's the incredible freshness that they have. And then there's the peanut sauce. I LOVE that! I made these for dinner one night when it was just mom and I, and we both literally licked the sauce off our plates. By the end we were just eating it by the spoonful! haha. Good times. These are also great as leftovers for lunch or a snack the next day. Fresh Spring Rolls Yields: as many as you want to make! Salmon Cashew Pizza

So, I was looking at the date on my last blog, and I couldn't believe it had been that long! Bye bye October!  Anyway, I've had this post half-done in draft form for a while and I figure I gotta force myself to finish it. This happened  weeks  ago mind you!  There's nothing like spending a Friday evening together with the family (mom, dad, and I :)) making homemade pizzas and watching a movie! It's little things like this that create the fondest memories!  Mom made a regular pizza crust for her and dad. I made a gluten free crust that seriously is the easiest crust I have ever made! It  took 10 min. tops. However, it wasn't like a traditional fluffy or crispy crust. It was slightly more rubbery, which sounds gross, but it actually fit really well with the sauce, etc.  I went a little crazy and made a really abnormal pizza. I made a yummy sauce and then topped with: broccoli, cauliflower, stir-fried salmon, cabbage, and cashews.  ...

Oat & Banana Soft Crackers

So, I'm pretty darn excited about this recipe! And the best part about it was that I wasn't expecting to make anything even close to this.  I had the image and idea of a wonderful, crunchy, crispy, oaty, banana-y, granola in mind. One that had mild banana flavor with banana covered oats and walnuts and dried, crunchy bananas.  OKAY! Woah. I'm going to start salivating! So, I headed to the kitchen with this amazing picture in my mind. Unfortunately I knew I would not be able to make it to my exact liking because 1) Cambodia does not have good raw nuts and if on the rare occasion they do, they are super expensive ($6-8 for 1/2 cup.) 2) There are no dried bananas here and I knew the ones I made would not be perfect and 3) I basically did no planning for this recipe.  Despite all of those factors, I still came up with something really good.
