Belgian Oat Waffles (gf, df, sf, soy free, V)

I love waffles. I don't know what it is, but something about them is just so satisfying. To be honest, I used to hate waffles. When I was little I used to think it was so frustrating how the syrup would pool in the crevices and then make my waffle soggy. I am very much a crispy fan. The only waffles or pancakes I liked were thin and crispy. While my taste for the crispy factor has not changed, I do like thicker, buttermilk waffles and pancakes. I am pleased to tell you that these waffles are both crispy. While they are thick, they don't have any sort of gummy, gooey texture whatsoever. They are extremely light and delicious! I tried several flours, but found that oat flour produced the best texture. I based this recipe off of my Buttermilk Oat Pancakes . Just put a slab of sunbutter (or whatever nut butter you can eat) and a dash of maple syrup and you've got a winning breakfast! I have no doubt you will enjoy these. Pumpkin Pancakes

I remember when I was younger, how it was always a special treat when my mom made pumpkin pancakes. It was probably one of the most glorious smells! We would cover  them in powdered sugar. My mom would say, "You probably don't need that much sugar." To which we would smugly reply, "But it falls off when you pick it up." Or, "it's not that  much!" Oh the days... I've always loved pumpkin pancakes, and so I knew it was time to make my own recipe, without all of the sugar. Now I think of pumpkin pancakes as a normal breakfast and not just a treat on a special occasion. I figure, it adds one more vegetable/fruit (whatever it is!) to my day! I created this recipe on a whim, and it actually turned out really good! I came up with the idea after my visit to the doctor. Mock 'Cream of Broccoli Soup' w/ Quinoa

Like I mentioned earlier, I've gotten back on the green smoothie train, which I am loving! I forgot how wonderful they make me feel! These green smoothies are cold and refreshing, but I knew that when the winter came it would be harder for me to drink these everyday. But I still want the benefits from these nutrition powerhouses. So I got thinking. And I thought that there's gotta be a way to make a hot version of these smoothies, but not necessarily with the same ingredients. That was when I got the idea of soup! Now,  I know your probably thinking, "Great. Yippee. What's new?" However, this soup is not just your average, ordinary soup. It's basically a hot green smoothie without the fruit. Okay, now your probably really grossed out. But don't be, because this soup is AMAZING!!!
